Recipe Andi's Gingerbread Cookies *This recipe has been adapted from this delicious recipe on Gimmie Some Oven's website.

Ingredients:

2 Large Eggs 1/2 cup Unsulfured molasses 3 1/2 cups All-purpose flour 3/4 tsp Baking soda 1/2 cup Dark Brown sugar, packed 1 tbsp Cinnamon, ground 1 tsp Cloves, ground 1 tsp Nutmeg, ground 1 tbsp Ginger, ground 1/2 tsp Salt 2 tsp Vanilla 3/4 cup Salted Butter zest of one small orange Directions:

1. Combine your dry ingredients: Flour, cinnamon, ginger, baking soda, cloves, salt and nutmeg.

2. Cream your butter and sugar together in a stand mixer (or with a hand mixer) until it's nice and fluffy. Then add the eggs and molasses, beating on medium speed until combined.

3. Add your dry mixture slowly. I do it about a half cup at a time. Do this just until it's all combined. You don't want to overmix.

4. You can chill the dough for a few hours, or up to a couple of days in the fridge at this point. I never do, and my cookies still keep their shape well. If you find yours spreading more than you like, try cooling the dough for a bit before or after cutting into shapes.

5. Roll and cut. Flour your rolling pin. Roll out to approximately 1/8-inch thickness. Cut into your favorite shapes. Move the cookies to a parchment-covered baking sheet.

6. Bake at 350°F for about 8 to 10 minutes, or until the cookies are crisp around the edges and on top. I lean closer to underbaking than I do overbaking. If you're building with them, you'll want them to stay in the oven closer to 10 minutes, depending on the size of the cookies you're making.

7. Remove from oven and let cool for about 5 minutes, then transfer to a wire rack to finish cooling.

8. Now, decorate and enjoy! These freeze really well. I like to triple the batch and make enough to enjoy most of the year.

*For a nice and easy frosting recipe, just combine a couple of Tbs of milk with about 2 cups of powdered sugar, and a little splash of vanilla.
